When the weather gets hot, the last thing most of us want is a heavy lunch or to spend Sunday afternoon with the oven heating up the entire kitchen. These summer lunch ideas include plenty of cold salads (and no, not boring ones), fresh rice bowls, wraps, BBQ recipes and lighter meals that can be prepared ahead without making meal prep take up your whole weekend (because we would all rather be out in the sun!)

Summer is also one of the easiest times to make meal prep taste good without spending a fortune. Zucchini, tomatoes, cucumber, capsicum, corn, mango, herbs and other seasonal produce are often at their best and cheapest, so I like building my summer meal prep around what is plentiful rather than forcing the same ingredients into meals year-round. You'll still find a few warm lunches here, but they tend to be lighter than my winter meal prep recipes and many can also be eaten cold.
