Slow cooker meal preps are one of the easiest ways to get ahead when you want home-cooked meals without spending every night in the kitchen. This round-up includes slow cooker chicken recipes, hearty beef options, mince recipes and most are done all in the one pot. They're also freezer-friendly recipes that reheat well and are practical for busy humans who want food ready without overcomplicating it.

If you've been following me for a while, you'll know I'm becoming more and more of a slow cooker person. It's such a convenient option for bulk meal prep, especially when I can make 8-12 serves in one appliance and use leftovers for lunches, dinners or freezer meals later in the month.
I also use my slow cooker a lot when I'm meal prepping for my gym community because it lets me make bigger batches without needing every pot and pan in the kitchen. Every recipe I share here has been tested with meal prep in mind, including how it stores, reheats and, where suitable, freezes.
One thing I've learned along the way is that the "dump and go" slow cooker meals floating around social media are a little bit of scam (especially if you like your taste buds). They're convenient, but if everything goes in raw, you can end up with a meal that tastes a bit flat. That's why I often recommend sautéing aromatics like onion, garlic and ginger, and browning proteins where it makes sense. It adds a little bit of extra time upfront, but it makes the final meal so much better.
13+ Easy Slow Cooker Recipes

1. Slow Cooker Apricot Chicken
This slow cooker apricot chicken with rice is a nostalgic Australian-style dinner made with chicken, apricot flavours and simple pantry ingredients. I remember having it a lot as a kid - and same with a lot of other families - so it's obviously very family-friendly. I've found a way to make it work as a slow cooker meal prep because it's simple, comforting and freezer-friendly. Make a batch for dinner, then portion the leftovers with rice, potatoes or vegetables for lunches during the week. And don't knock the added mushrooms until you've tasted it!

2. Slow Cooker Satay Chicken
This slow cooker chicken satay rice bowl is made with shredded chicken and a satay sauce without coconut milk. It took a few tests to get the sauce right because slow cookers can water down flavours, but I've made it as flavour packed as my satay chicken and satay tofu! It's already got vegetables in the mix so you just need to serve it alongside some rice for a balanced and healthy meal prep.

3. Slow Cooker Beef and Noodles
Slow cooker Mongolian-inspired beef and noodles is rich in flavour made with browned chuck steak, soy sauce, ginger, chilli and noodles stirred through at the end. Browning the beef and building the sauce with aromatics gives it more depth than a basic dump-and-go version. It's a great slow cooker lunch meal prep because the flavours settle overnight and reheat well the next day - or you can have it as a cold meal prep option when you don't have access to a microwave.

4. Slow Cooker Beef Goulash
This slow cooker beef and paprika stew is made with tender beef, potatoes and vegetables. It's one of those slow cooker meal recipes that suits colder weeks when you want something filling without hovering over the stove. My partner had this a lot growing up - both in the slow cooker and on the stove - and found it a fantastic recipe for leftovers (because they always made a huge batch!) The flavours deepen as it sits, making it a practical make ahead dinner or freezer meal for busy nights.

5. Slow Cooker Buffalo Chicken Pasta
This slow cooker buffalo chicken pasta was inspired by buffalo chicken wings but turned into a balanced meal prep. It's made with tender chicken, Frank's hot sauce, pasta and a creamy sauce (but without the heavy cream or cream cheese) that works well for regular weeknight dinners. This is a good slow cooked chicken option because it holds up well in the fridge and is easy to portion for lunches.

6. Slow Cooker Massaman Beef
My partner is a big fan of the Thai takeout beef massaman, but at $30 a pop (and no, that doesn't include rice), it hurts our wallet. This slow cooker beef massaman curry is a creamy, cosy dish made with tender beef, potatoes and a rich Thai-inspired sauce. It's a good one when you want a weeknight slow cooker meal that feels like takeaway but costs a lot less than ordering in. The slow cooker does most of the work, and the leftovers are ideal with rice for easy meal prep lunches.

7. Slow Cooker Chicken Cacciatore
This slow cooker chicken cacciatore with olives is a rich tomato-based Italian-style stew made with chicken thighs, kalamata olives, mushrooms and rosemary. It's mostly hands-off, but still has enough flavour to avoid that watery slow cooker meal problem. Serve it with pasta, rice, potatoes or bread for a flexible meal that you won't get bored of that reheats well.

8. Slow Cooker Pesto Chicken Pasta
This slow cooker chicken pesto pasta is made with shredded chicken cooked in a creamy basil-spinach pesto (without heavy cream), then tossed through pasta for a simple hands-off dinner. It's been tested to make sure the flavour holds up in the slow cooker, because pesto can easily become a bit dull if the ratios aren't right. You can reheat it for your work week lunch or have it as a cold meal prep for a pasta salad vibe if you don't have a microwave.

9. Slow Cooker Beef Taco Soup
Slow cooked Mexican beef soup is a cosy mince slow cooker meal made with ground beef, beans, tomatoes, corn and taco-style spices. It started as a stovetop recipe, but adapting it for the slow cooker means it makes more serves with less hands-on time. It's freezer-friendly, budget-conscious and perfect for a Plan B meal when future-you needs dinner sorted without the effort. Oh, and don't forget to serve it with some crunchy tortillas!

10. Slow Cooker Mexican Chicken
This slow cooker Mexican chicken rice bowl is packed with juicy shredded chicken cooked in Mexican-inspired spices, tomatoes and simple pantry ingredients. It's one of the easiest slow cooker meal prep ideas because you can use it across rice bowls, wraps, tacos, salads or freezer portions. This is a good high-protein chicken option when you want one protein base that can become multiple meals across the week.

11. Slow Cooker Teriyaki Chicken
My slow cooker teriyaki chicken rice bowl is made with chicken breast, a homemade Asian-style teriyaki sauce that's been adjusted specifically for the slow cooker, and broccoli, then served with rice for an easy balanced meal. It's a simple crockpot meal that suits both weeknight dinners and a weekly meal prep. The sauce keeps the chicken from feeling dry, and the broccoli helps round it out without needing a lot of extra sides.

12. Slow Cooker Shredded Chicken
This 2-ingredient slow cooker shredded chicken breast is a basic meal prep protein made with chicken breast and a homemade chicken stock. It's intentionally simple so you can turn it into dishes like my Mediterranean chicken wrap, satay chicken salad or other quick dinners during the week. It's a freezer-friendly slow cook which is low effort and ideal when you want to prepare ahead without locking yourself into one flavour.

13. Slow Cooker Beef and Broccoli
This slow cooker beef and broccoli with rice is a takeaway-style beef meal made with tender beef, broccoli and a savoury Asian-inspired sauce. It works well for meal prep because you can portion it with rice or noodles and have lunches ready for the week.
FAQs
Yes, many slow cooker meal preps freeze well, especially soups, stews, curries, shredded meats and saucy chicken or beef recipes.
Â
Pasta and noodles are usually best cooked fresh or stored separately where possible, but the slow cooker base can often be frozen in portions. But, I have a few tips and tricks up my sleeve because I like to think of myself as the meal prep queen so if you go into each of the recipes, I've added some information on how to best prepare and store in the freezer.
Slow cooker meals can taste bland when there aren't enough aromatics, seasoning or flavour-building steps. Onion, garlic, ginger, spices, sauces and browning can make a big difference, especially because slow cookers create extra moisture as they cook.
Slow cookers create extra moisture because liquid doesn't evaporate the same way it does on the stovetop. Use less liquid than you think, avoid adding too many watery vegetables early, and thicken the sauce at the end if needed. This can be done by mixing a cornflour slurry (approx. 2 tablespoon water/liquid with 1 tablespoon cornflour) or leave the lid off while cooking for 30 minutes to let it reduce.
Chicken breast can dry out if it cooks too long, even in a slow cooker. Use the recommended cook time, shred it once tender, and stir it back through the sauce so it stays moist for meal prep.
