Ingredients and Substitutions

Soy Sauce and Dark Soy. The base of the sauce; the combination provides a richer and deeper flavour than just soy sauce.
Oyster Sauce. This sauce is like 14 in one and really enhances the overall Asian-inspired sauce. You can substitute for fish sauce, hoisin sauce or more soy if you don't have it, but the flavour won't be as good.
Garlic. Freshly minced garlic offers a pungent kick that's essential for this sauce. Don't use jarred, please.
Brown Sugar. Balances the saltiness with a touch of sweetness.

Top Tip
Want a thick sauce? Add all ingredients to a saucepan over low heat and whisk until sugar is dissolved. Whisk separately 1 teaspoon cornstarch with 2 teaspoon water (cornflour slurry) and add. Stir while it thickens (approx. 5 minutes)
Uses of Garlic Soy Sauce
You can use the sauce as a marinade for proteins like Chicken, Pork, Beef or even in Vegetarian dishes.
Try and substitute it as the sauce in Stir Fry dishes like Shrimp Stir Fry and Black Pepper Tofu Stir Fry. You can even coat some chicken or tofu in a Poke Bowl.
Even more simply, you can use it over some Rice and add your favourite protein and veggies - it would taste awesome as the sauce for Mediterranean Gnocchi.

How long can you store garlic soy sauce?
Store in an airtight container or jar in the fridge for 2 weeks.
Can you freeze this sauce?
Yes. Pour the sauce into ice cube trays and freeze. Once solid, transfer to a freezer bag for up to three months.

Garlic Soy Sauce

Ingredients
- ¼ cup soy sauce
- 2 tablespoon dark soy sauce, see note 1
- 2 tablespoon oyster sauce, see note 2 (or fish sauce)
- 6 cloves garlic, minced
- 1 tablespoon brown sugar
- ¼ cup water
Instructions
- Mix together the ingredients (¼ cup soy sauce, 2 tablespoon dark soy sauce, 2 tablespoon oyster sauce, 6 cloves garlic, 1 tablespoon brown sugar, ¼ cup water) with a whisk until sugar is dissolved.
- (optional) if you want a thicker sauce, add all ingredients to a small saucepan and whisk until sugar dissolves. Mix together 1 teaspoon cornflour and 2 teaspoon water, then add to the mixture and stir until it begins to thicken. Let it cool before transferring to a container.
