Why you'll love this recipe
Festive flavours. This brings the cozy, holiday-inspired gingerbread taste to breakfast like my gingerbread smoothie or gingerbread baked oats.
Perfect for meal prep. Make it the night before for an easy, ready-to-eat breakfast that's ideal for busy mornings.
Customizable toppings. Add your favorite fruits, nuts, or a drizzle of honey or even some raspberry chia seed jam to make it exactly how you like it each time.
Ingredients and substitutions

Weetbix/Weetabix. Weetbix (or Weetabix in the UK) is a wheat-based cereal that commonly comes in "bricks". When softened with liquid and left overnight, it transforms into a cookie-dough texture base.
In Americas, a crushed bran flake could provide the same texture, but I haven't tried (let me know if you do).
Milk. Feel free to use dairy-free options like almond, oat, or soy milk for a plant-based alternative.
Gingerbread spice. I use a combination of with cinnamon, ginger, cloves and allspice and you can adjust for your preferences - like I suggest in my gingerbread granola recipe.

How to make overnight weetbix
Step 1: In a bowl or your meal prep container, crumble the Weetbix.
Step 2: If using protein powder, add to a shaker with the milk then pour over the crushed Weetbix with the gingerbread spice.
Stir everything together until the Weetbix is evenly soaked and spiced. Let it sit for a couple of minutes to soften. Press to form the base.
Step 3: Spoon your yoghurt on top of the softened Weetbix mixture, spreading it evenly. Add any additional toppings like fresh fruit, nuts, or a drizzle of honey if desired.
Step 4: Enjoy right away for a quick breakfast, or prepare it the night before for an easy morning meal.
My Top Tip
If you want to go all-out in the festivities, make sure you add some gingerbread biscuits on top!
Meal prepping

I have been meal prepping overnight weetbix for years as it's super easy and convenient. You can line up your meal prep containers and smash out a week's worth of prep in next to no time.
I prepare overnight weetbix in separate, single-serve containers for convenience, but you could always prep a super large batch (just make sure you have enough liquid to soak up the weetbix).
The weetbix continue to absorb the liquid and flavours overnight, and especially with the gingerbread spice on the weetbix, it's more delicious the next day.

FAQs
Overnight Weetbix can stay fresh in the fridge for up to 3-4 days, making it an ideal meal prep breakfast. Storing your overnight Weetbix in an airtight container helps preserve its texture, and you can add toppings like fresh fruit just before serving to keep them at their best.
Overnight Weetbix is a make-ahead breakfast where crushed Weetbix (or Weetabix) is soaked overnight in milk or other liquid, allowing it to soften and absorb flavours. It's commonly then topped with yoghurt, fruit or even some raspberry chia jam. It's similar to overnight oats (like my PB&J Overnight Oats or Passion Mango Overnight Oats) but uses Weetbix as the base for a different texture and flavour.
