Gingerbread overnight weetbix brings all the cozy, spiced flavors of gingerbread into a quick and easy breakfast. Crushed weetbix layered with a ginger-spiced yogurt mix and topped with a sprinkle of cinnamon (and gingerbread people, of course) creates a wholesome, festive treat to start your morning. Perfect for a holiday meal prep or just a fun Christmas breakfast that's zero hassle in the morning!
I'm normally a huge overnight oats or baked oats fan, but every now and then I revert back to my childhood roots with a weetbix recipe, like these gingerbread weetbix. The overnight variety of weetbix makes the breakfast meal prep friendly, and I can prep a big batch at the beginning of the week so I'm sorted all week long!

Ingredients
Weetbix/Weetabix. Weetbix (or Weetabix in the UK) is a wheat-based cereal that commonly comes in "bricks". When softened with liquid and left overnight, it transforms into a cookie-dough texture base. In Americas, a crushed bran flake could provide the same texture, but I haven't tried (let me know if you do).
Milk. Adds creaminess to soften the Weetbix; feel free to use dairy-free options like almond, oat, or soy milk for a plant-based alternative.
Gingerbread spice. A warm blend of spices that gives a festive, cozy flavor; you can mix your own with cinnamon, ginger, cloves and allspice - like I suggest in my gingerbread granola recipe.
Yoghurt. Adds tanginess and creaminess to the mix and gives a "cheesecake" vibe on top of the weetbix.

How to make
- Crush the weetbix
In a bowl or your meal prep container, crumble the Weetbix.
- Add milk and gingerbread spice
Pour the milk over the crushed Weetbix, then sprinkle in the gingerbread spice. Stir everything together until the Weetbix is evenly soaked and spiced. Let it sit for a couple of minutes to soften. Press to form the base.
- Top with yoghurt
Spoon your yoghurt on top of the softened Weetbix mixture, spreading it evenly. Add any additional toppings like fresh fruit, nuts, or a drizzle of honey if desired.
- Serve and enjoy
Enjoy this gingerbread-spiced Weetbix bowl right away for a comforting, quick breakfast, or prepare it the night before for an easy morning meal.
Top Tip
If you want to go all-out in the festivities, make sure you add some gingerbread biscuits on top!
Meal prep and leftovers
I have been meal prepping overnight weetbix for years as it's super easy and convenient. You can line up your meal prep containers and smash out a week's worth of prep in next to no time.
I prepare overnight weetbix in separate, single-serve containers for convenience, but you could always prep a super large batch (just make sure you have enough liquid to soak up the weetbix).
The weetbix continue to absorb the liquid and flavours overnight, and especially with the gingerbread spice on the weetbix, it's more delicious the next day.

Gingerbread Overnight Weetbix
Ingredients
- 3 weetbix or Weetabix (UK)
- 125 ml (½ cup) milk
- 15 g (1 tbsp) gingerbread spice (combine: cinnamon, ginger, allspice, cloves)
- 240 g (1 cup) yoghurt plain, vanilla or cinnamon
Toppings
- 3 gingerbread men optional (recipe here)
- Cinnamon sugar
Instructions
- Crush weetbix in a bowl or meal prep container.
- Add milk and gingerbread spice to the crushed weetbix. Stir then flatten. Let sit for approx. 5 minutes so it can absorb the milk.
- Top with yoghurt, then sprinkle some cinnamon sugar and gingerbread men. In a bowl or your meal prep container, crumble the Weetbix.
