Banoffee Flavour. If you love the classic combination of caramel and banana, this is for you—just like Banoffee Overnight Oats but warm and baked.

Ingredients

Rolled Oats. The base of the baked oatmeal. I recommend rolled oats over quick oats for better structure and texture. If you use quick oats, you may need to adjust the amount of liquid.
Flour. Helps bind the ingredients together and gives the oats a slightly more structured texture.
Chia Seeds. Help bind the mixture and create a great texture while adding extra fibre and nutrients. You can use either white or black.
Milk. Any milk works, but creamier options like cow’s milk, soy milk, or certain oat milk varieties will give the best texture.
Banana. The riper, the better for natural sweetness and a softer consistency in the baked oats.
Caramel. Optional and adjustable to taste—I use sugar-free caramel since the banana already adds plenty of sweetness.
Protein Powder. Optional, but vanilla, plain, or caramel flavours work best. Vegan protein is ideal as it acts more like flour compared to whey varieties.

How to make banoffee baked oats
Step 1: Set your oven to 160°C (320°F) and lightly grease a baking dish or line it with parchment paper.
Step 2: In a large mixing bowl, mash the bananas until smooth then add in dry ingredients.
Step 3: Pour in the milk and caramel, and mix until everything is evenly incorporated. The batter should be thick but pourable.
Step 4: Pour the mixture into the prepared baking dish and spread it evenly.
Step 5: Place in the preheated oven and bake for 30-50 minutes (depending on whether you prefer it more moist, or more cakey).

Top Tip
Adjust caramel. Adjust the caramel to your personal preferences and have a little taste before opting to add more (as the bananas already make it very sweet).
Use ripe bananas. The riper the bananas, the sweeter the baked oats are going to be.
Recommended Equipment
I use a deep square baking container (approx. 26 x 6.5cm) for my baked oats recipes (which is pictured in the photos of the final dish). The mixture comes up a little over halfway to the top.
If you choose to use a different baking dish, you may need to adjust the baking time.
Meal prepping baked oatmeal

Having baked oats meal prepped in my fridge (or leftovers in my freezer) is such a gamechanger for me and my partner's Weekly Meal Plan. They taste good hot or cold, defrost well (and deliciously) and are easy to store.
Plus, you can be extremely versatile with your flavours. I've done a Biscoff and Raspberry, Almond Croissant, even a Gingerbread and Pumpkin Baked Oatmeal. There are so many options!!!
How do you store baked oats?
Make sure the baked oatmeal cools at room temperature for no more than 2 hours. If you store when it's still warm, it'll create moisture in the container and could impact the taste/texture.
Store in an airtight container for up to 4 days, or you can freeze for up to 6 months by wrapping them in aluminium foil, baking paper, or plastic wrap. See this post for Freezing Baked Oats.
Do you need to reheat baked oats?
You don't have to, but you can.
If you want, Warm individual portions in the microwave for around 60 seconds (depending on thickness) or in the oven at 160°C (320°F) for about 10 minutes until heated through.

Banoffee refers to "banana" and "toffee" which is why I use banana and caramel as the main flavour components of this baked oats recipe. I use similar options in the Banoffee Overnight Oats.
Yes, you can make Banoffee Overnight Oats which is essentially the same ingredients but without the need to cook.
The banana is key for the banoffee flavour, but you can swap it for applesauce or mashed pumpkin if needed.

- 2 (2) bananas, mashed (approx. 1 cup) substitutions Note 1
- 170 g (2 cups) rolled oats
- 100 g (¾ cups) flour
- 55 g (½ cups) protein powder, 2 scoops, optional, vanilla or caramel, see Note 2
- 40 g (¼ cups) chia seeds, optional but recommended
- 250 ml (1 cups) milk, substitutions note 3
- 30 g (2 tablespoon) caramel topping, see note 4

- Set your oven to 160°C (320°F) and lightly grease a baking dish or line it with parchment paper.
- In a large mixing bowl, mash the 2 bananas until smooth then add in 170 g rolled oats, 100 g flour, 55 g protein powder, 40 g chia seeds.
- Pour in the 250 ml milk and 30 g caramel topping, and mix until everything is evenly incorporated. The batter should be thick but pourable.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Place in the preheated oven and bake for 30-50 minutes (depending on whether you prefer it more moist, or more cakey).
