The twang of lemon is one of my favourites in sweet treats, so it makes sense that these lemon blueberry overnight oats are a great breakfast meal prep recipe.

Why you'll love this recipe
Breakfast meal prep. Like my other 15+ overnight oatmeal recipes, these are a fantastic option for your work week breakfast.
Zesty lemon flavour. I love love love lemon, and if you do too you'll love these - and should definitely try my lemon blueberry cookies next!
Fresh or frozen. Depending on what season you're in, use fresh or frozen blueberries so you can enjoy year round!
Ingredients

Rolled oats. I recommend these over steel cut or quick oats because they provide a better texture once set with the chia seeds.
Lemon. You can adjust the lemon according to your preferences by adding more/less. If you're a big fan, add in some zest (just the yellow outside, not the white).
Yogurt. If you like your lemon flavour but prefer it a bit sweeter, go for a lemon yogurt - it adds a really nice oomph.
I do this with a single tub (which is why the measurements are different to my other overnight oats recipes). There's no waste as you use the whole tub, but it is a bit thicker. Add some extra liquid if you're concerned or spread out across serves.

My Top Tip
Use frozen blueberries instead of fresh. They'll melt overnight into the mixture and make it super delicious!
Meal prep and leftovers

Meal prepping overnight oats is incredibly easy and convenient.
Just add the ingredients to a jar or container and store in the fridge overnight so you have an easy breakfast ready for your busy day.
You can store overnight oats in an airtight container for up to 4-5 days.
If you like hot oats, add a tablespoon of liquid in and microwave on 1 minute intervals (it'll take around 3 minutes) before eating - it'll taste like stove-top oats!

Lemon Blueberry Overnight Oats

- 50 g (½ cups) rolled oats , Note 1
- 15 g (1 tablespoon) chia seeds , optional, Note 2
- 160 g (¾ cups) lemon Greek yoghurt , subs Note 3
- 40 g (2 tablespoon) milk , subs Note 4
- 30 g (2 tablespoon) protein, optional, neutral or vanilla recommended
- 75 g (½ cups) blueberries , Note 5
Instructions
- Mix together 50 g rolled oats, 15 g (1 tablespoon) chia seeds , 160 g (¾ cups) lemon Greek yoghurt , 40 g (2 tablespoon) milk , 30 g (2 tablespoon) protein Add blueberries on top.
- Add 75 g (½ cups) blueberries on top. Store in an airtight container in the fridge for at least 4 hours (preferably overnight).
