I make my own protein bagels, but you can purchase these from the store if that is your preference.
Rocket. Peppery and fresh, rocket adds a light crunch.

You can assemble them the night before and the texture won't deteriorate, but I wouldn't recommend assembling them any further beforehand.
Reheating
If desired, lightly toast the bagels straight from the fridge for a warm base before adding cream cheese and toppings. Avoid reheating the entire bagel with the toppings on it, as the cream cheese and smoked salmon aren't pleasant once heated.
Freezing
Avoid freezing assembled bagels as the cream cheese and fresh toppings don't thaw well. Instead, freeze bagels individually, wrapped in plastic or parchment paper, for up to 3 months. Thaw overnight in the fridge and toast before assembling.

Scallion Cream Cheese Smoked Salmon Bagel
Ingredients
- 1 bagel halved, toasted is optional
- 2 tablespoon scallion cream cheese
- ¼ cup rocket
- 25 g smoked salmon
- 6 capers
Instructions
- Slice bagel in half on the horizontal. If desired, toast.
- Spread scallion cream cheese on one half (or add to each half if desired), then add rocket, smoked salmon and capers. Sprinkle with salt and pepper as desired.
