Ingredients

Eggs. Is it even necessary to explain this one?
Bacon. For the classic "bacon and egg" vibe.
Spinach. Bit of colour and micronutrients.
Salt & Pepper. DO NOT OMIT! You could also use other seasonings, or even chilli flakes to give the single serve frittata some edge.

How to make a frittata for one
- Cook spuds (optional)
Preheat oven to 180°C (350°F). Lightly grease a small oven-safe meal prep container with oil. (if using roasted potatoes to serve with) Arrange roasted potatoes in one section of the container as the base of your single serve frittata meal. Add to oven for 10 minutes.
- Prepare frittata
Whisk eggs, diced bacon, diced spinach together with salt & pepper. Add to the other side of the meal prep container coated with a light spray of oil.
- Bake
for 15 minutes or until the eggs are fully set and lightly golden on top.
- Serve
Serve your no cheese frittata warm, straight from the container for a fuss-free, delicious single serve meal or see meal prep tips below.
Top Tip
No one likes bland eggs so please oh please add salt and pepper to this. I would also recommend a bit of flavour, like Italian Herbs or even a bit of garlic.
Substitutions and variations
Veggie packed. Swap bacon for some extra veggies - mushrooms, capsicum (bell peppers), onions - all work well.
Spicy. Top with some chili flakes for a spicy twist to your frittata for one.
Herby. Chop up some mixed herbs like parsley and dill to bring a bright flavour. Or you could even add in a bit of pesto.
Meal prep and leftovers

Meal prepping a dairy free frittata for one is quick and easy. You can prepare the frittata ingredients ahead of time, making it perfect for a grab-and-go meal. I served mine with roasted potatoes in the same container, cooking the potatoes for 20 minutes before adding the frittata ingredients (I used a two sided container as pictured). You could also serve with veggies, a salad, or even a sweet option like yoghurt and fresh berries in the same container to enjoy a balanced breakfast.
Storing
Store your prepared frittata and sides in an airtight meal prep container in the fridge for up to 3 days. You could store it for up to 5 days, but the texture won't be as nice as the egg can get soggy.
Reheating
Reheat the frittata and potatoes in the microwave for 1-2 minutes until warmed through, or in the oven at 180°C (350°F) for about 10 minutes for a crispier texture.
Freezing
You can freeze the frittata, but note that it may slightly change the texture which makes it not as nice when heated up. If you do choose to freeze, keep it on the lower end for up to 2 months and reheat in the oven or air fryer to bring back some crispness (as the microwave might not be able to revive the texture).

Ingredients
- 5 ml (1 tsp) oil, for coating the dish
- 3 eggs
- 50 g (~1) bacon rasher, diced
- 20 g (¼ cup, tightly packed) spinach, diced
- Salt and pepper, don't omit
- 1-2 potatoes, cubed (optional) (season as desired)
Instructions
- Preheat the oven to 180°C (350°F) and grease a small container with oil. If using a side of roast potatoes, add them to one side and bake for 10 minutes.
- Whisk eggs, salt, pepper, bacon, and spinach together. Pour over the potatoes in the container.
