Single serve chocolate chip cookie cake is the perfect quick treat (or even a breakfast meal prep) when you’re craving a warm, gooey dessert but don't want to make a big batch. This banana chocolate chip cookie is baked to golden perfection with a soft centre and crispy edges - plus it's all done in one pan (although you could make it into a cookie shape if you want).

Ingredients
Banana. Adds natural sweetness and moisture to the single serve cookie cake, and can be substituted with applesauce if preferred.
Flour. Provides structure and texture to the cookie cake. I also add protein powder to increase the amount of protein, but you can substitute with equal amounts of flour.
Milk. Adds moisture and helps bind the ingredients together. Use any type of milk you want.
Protein powder. Boosts the protein content of the single serve cookie cake, making it more filling. Can be omitted or swapped with your favorite protein flavour.
Brown sugar. Adds sweetness and a rich, caramel-like flavor to the cookie cake.
Egg. Helps bind the ingredients and provides structure. See recipe card for substitutions.
Vanilla extract. Enhances the overall flavor of the cookie cake. It's optional, but I do recommend for the classic choc chip cookie flavour.
Choc chips. Add melty chocolate goodness throughout the single serve cookie cake. Mix-and-match with your choice of fixins for some variety!

How to make single serve cookie
- Mash the banana
In a small bowl or oven-safe dish, mash the very ripe banana until smooth.
- Mix the ingredients
Add the flour, milk, protein powder, brown sugar, egg, and vanilla extract to the mashed banana. Stir until everything is well combined, making sure there are no lumps.
- Add choc chips
Fold in most of the chocolate chips, reserving a few to sprinkle on top.
- Bake
Bake in a preheated oven at 180°C (350°F) for 12-15 minutes or until the top is golden and a toothpick inserted into the centre comes out mostly clean with a few moist crumbs.
- Serve
Allow the single serve cookie cake to cool slightly before enjoying straight from the dish, or transfer to a plate.
Top Tip
Use a very ripe banana for maximum sweetness and a smoother texture. If your banana isn’t ripe enough, you can microwave it for 10-15 seconds to soften.
Meal prep and leftovers
Single serve cookie cake is perfect for meal prepping, especially when cooked directly in the meal prep container. This makes it super convenient for transporting, eating, and minimizes clean-up. Sure, it's not cookie shaped, but do they really need to be?
Storing
Let the protein cookie cake cool in the container, then you can just pop on the lid and keep at room temperature for 2 days, or in the fridge for 5.
Reheating
You can eat the single serve cookie cold or at room temperature, but if you want gooey chocolate chips, warm it in the microwave for 20 seconds to restore its soft, fresh texture before eating.
You can also reheat this single serve cookie without butter in the air fryer at 160C for about 5 minutes.
Freezing
To freeze, allow the cookie cake to cool completely, then store in an airtight container or freezer bag for up to 3-6 months (depending on your freezing method). Thaw overnight in the fridge and reheat before serving for the best results.
