Nothing says summer like a piece of salmon and some mango. So obviously this whole salmon side with mango salsa is an absolute winner on a hot day.
I can cook a fillet of Salmon perfectly Every. Single. Time. It's actually my party trick. And every time I have guests over and cook them a piece, they are AMAZED.
So now that I've given it a go with a whole salmon side in the oven, I had to share with you all! Especially as it would be a fantastic recipe for an Aussie Christmas 😉

Whole salmon side with mango salsa ingredients
Salmon side. Obviously the key to a "Whole Salmon Side" recipe is a salmon side. I prepared this recipe with a pre-cut salmon side from Aldi. It came pre-seasoned, which was nice. Normally, I don't season my salmon as I love the salmon flavour on its own and believe it works well without the seasoning for the salsa verde. For Australians, I believe you can also buy salmon sides from Coles, or your local fish store.
Mango. Mangos are probably my favourite part of Summer in Australia.
Avocados. I am a big avocado fan, especially in a fruity mango salad. But if you're not, you don't have to add.
Crunch. I like to use a mix of tomato, capsicum/peppers and red onion. You could also use jalapenos if you like a bit of spice.
Herbs. Normally you would use cilantro/coriander (depending on the side of the globe), but I know that half the population thinks this tastes like soup. Which is why I make mine with dill and parsley. Not only is it more delicious, but it is so much more fitting for a summer recipe.
Seasoning. Keep it simple. A spicy spice of some description (whether your preference is paprika or you're more of a dried chili fan) and some garlic powder. Plus a squeeze of lime juice.
How to cook salmon side in the oven
- Prepare Tray
Place a piece of aluminium foil (larger than your salmon) on a large baking tray. Spray olive oil and place the salmon on top with the skin side down.
- Prepare Salmon
Drizzle or spray a bit of olive oil and lemon on top of the salmon, then add salt and pepper to taste.
- Prepare to Cook
Fold the edges of the aluminium foil up around the salmon (not covering it). This allows the heat to continue circulating while in the oven.
- Bake, then Rest
Bake in the oven for 15-20 minutes (depending on how thick your salmon is), then let sit and rest for 10 minutes afterwards.
How to make mango salsa verde
First, cut all the mango, tomatoes, capsicum and red onion into small pieces (the smaller the better as this allows each bite to have all the flavours).
Second, add to a medium sized bowl with the herbs and seasoning. Mix well to combine and add salt and pepper to taste.

You can serve this immediately, but allowing it to rest in the fridge for at least 20 minutes or overnight will allow the flavours to sink into the ingredients. Mango salsa will last in the fridge overnight in an airtight container or jar. The juice from the lime should stop the avocado from discolouring.
If salmon isn't your thing, there are plenty of other fish in the sea (see what I did there). Why not try it with my Whole Barramundi, or even a Baked Ham? I'm sure it would also go excellent with my Butterflied Chicken or the side of a Roast Pork instead of your apple sauce.
Salmon side will cook in the oven in a very similar timeframe to a salmon fillet - depending on the thickness. Bake for 15-20 minutes @180C then allow it to rest for at least 5-10 minutes.

Whole Salmon Side with Mango Salsa Recipe
Ingredients
Salmon
- ~1 kg salmon side See Note 1
- 2 tablespoon extra virgin olive oil
- ½ lemon
- Salt and pepper to taste
Mango Salsa (See Note 2)
- 1 mango diced
- 1 avocado diced
- ½ red onion diced
- 1 cup cherry tomatoes diced
- ½ red capsicum diced
- ¼ cup dill fresh
- ¼ cup parsley fresh
- 1 lime juice and zest
- 1 teaspoon paprika See Note 3
- 1 teaspoon garlic powder
