Cut all the mango, tomatoes, capsicum and red onion into small pieces (the smaller the better as this allows each bite to have all the flavours).
Add to a medium sized bowl with the herbs and seasoning. Mix well to combine and add salt and pepper to taste. Allow to rest in the refrigerator while you prepare you salmon (or up to overnight).
Place a piece of aluminium foil (larger than your salmon) on a large baking tray. Spray olive oil and place the salmon on top with the skin side down.
Drizzle or spray a bit of olive oil and lemon on top of the salmon, then add salt and pepper to taste.
Fold the edges of the aluminium foil up around the salmon (not covering it). This allows the heat to continue circulating while in the oven.
Bake in the oven for 15-20 minutes (depending on how thick your salmon is, then let sit and rest for 10 minutes afterwards.
Add mango salsa on top of salmon and serve.

Note 1 - Salmon SideYou can do this with any piece of Salmon, whether it be a side of salmon or just a fillet. Cooking times will be similar but the side will be able to serve more people.You could also substitute for any other fish you desire.Note 2 - Salsa VerdeThe ingredients and quantities here are very flexible.
