Ingredients and Substitutions

White Chocolate Tim Tams. These are white chocolate covered cookies with a mousse-like texture in the middle. Outside of Australia, these can be difficult to find.
Substitute with other white chocolate biscuits/cookies, or even just plain white chocolate (however, you may need to add more/less coconut depending on their consistency).
Desiccated Coconut. It adds a light texture and tropical flavour and helps bind the ingredients together. You might need more or less depending on the type of cookies you use.
Condensed Milk. Condensed milk is the glue. You could use a coconut condensed milk to really emphasise the coconut flavour, or another dairy-free option like oat.

How to make white choc truffles
Step 1:Using a food processor, blitz the white chocolate Tim Tams into fine crumbs. If you don't have a processor, pop them in a ziplock bag and crush them with a rolling pin until fine. Transfer the crumbs to a mixing bowl.
Step 2: Add 1 cup of desiccated coconut to the crushed Tim Tams, followed by the condensed milk. Stir with a spoon or mix with your hands (I use the food processor because I'm lazy) until the ingredients come together into a sticky dough.
Step 3: Scoop out small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls using your hands. Place the balls on a baking tray lined with parchment paper.
If the mixture is too sticky to handle, refrigerate for 15-20 minutes before rolling.
Step 4: Add the remaining ½ cup of desiccated coconut to a shallow bowl. Roll each ball in the coconut until fully coated, gently pressing the coconut into the surface for a neat finish.
Step 5: Place the coated truffles in the fridge for at least 30 minutes to firm up.
Step 6: Serve your white chocolate truffles chilled.

Chill the Dough. If your mixture feels too sticky to roll into balls, pop it in the fridge for 15-20 minutes to firm up. This will make handling much easier.
Use a Cookie Scoop. For evenly sized truffles, use a small cookie or ice cream scoop to portion out the mixture before rolling.
Add a Flavour Twist. For a festive spin, mix a pinch of cinnamon or nutmeg into the desiccated coconut used for coating, or drizzle melted white chocolate over the truffles for added sweetness.

Storing
To keep these fresh, store in an airtight container in the fridge for up to 2 weeks. Place them in a single layer with parchment paper in between if stacking to prevent them from sticking.
If serving at a party or gathering, take them out 10-15 minutes before serving to soften slightly.
Freezing
Freezing Uncoated Truffles: Roll the mixture into balls but don't coat them in coconut yet. Place the uncoated truffles on a parchment-lined tray and freeze until firm. Once frozen, transfer them to a freezer-safe bag or container and freeze for up to 3 months. When ready to serve, thaw in the fridge and roll them in desiccated coconut for a fresh finish.
Freezing Fully Made Truffles: If already coated, place the truffles in a single layer in an airtight container with parchment paper between layers. Freeze for up to 3 months. Thaw in the fridge overnight before serving.

Ingredients
- 165 g (6 oz) White Chocolate Tim Tams, approx.1 packet, subs note 1
- 120 g (1 ½ cups) Desiccated Coconut, 1 cup mixture + ½ cup coating
- 150 ml (⅔ cups) Condensed Milk, subs note 2
Instructions
- Crush the 165 g White Chocolate Tim Tams into fine crumbs using a food processor or by placing them in a ziplock bag and crushing with a rolling pin.
- Add 1 cup of desiccated coconut and 150 ml (⅔ cups) Condensed Milk to the crumbs. Stir, process or mix by hand until a sticky dough forms.adjust with additional desiccated coconut if necessary
- Roll 1-tablespoon portions of the mixture into balls, placing them on a parchment-lined baking tray. If too sticky, refrigerate for 15-20 minutes before rolling.
- Coat each ball by rolling in the remaining ½ cup of desiccated coconut, pressing gently for a smooth finish.
