This curried beef mince and rice is a simple, hearty meal that packs a punch of flavour. Zak said the only thing missing was that there wasn't more for lunch. With savory ground beef, aromatic curry powder, and a mix of veggies, this dish is easy to make and perfect for meal prepping or batch cooking.

When I asked Zak for feedback, he said that the downside was there wasn't more of it! So I take that as pretty positive that this is a winning meal prep.

Why you'll love this recipe
Batch Cook. This recipe is easy to prepare extra servings for future meals. Just double or triple the ingredients, just like you would for spaghetti bolognese or beef goulash soup.
Meal Prep. This is ideal for meal prepping, offering a good balance of carbs, protein, and veggies.
Mince. Ground beef is a versatile and easy-to-cook protein that makes this dish quick and simple to prepare like my teriyaki ground beef rice bowl and big mac burger bowl are easy ground meat options.
Frozen veg. To make this dish even more affordable, I've used frozen vegetables (it also cuts down the prep time!!)
Ingredients and substitutions

Beef mince. I recommend a lean ground beef as it will have less water and makes a higher-quality protein for a week long meal prep. You could also substitute for ground pork, chicken or turkey like my turkey san choy bow.
Stock. Stock adds depth and richness to the curry. I use a homemade chicken stock, but store-bought beef, chicken or vegetable stock would work well.
Worcestershire sauce. DO. NOT. SKIP. If you've ever heard of the importance of the "umami" flavour, this contributes to it, making meats like beef even more irresistible.
Frozen carrot, peas, and corn. You can use fresh and dice the carrot as you wish, or substitute with other vegetables you have on hand. Frozen are extremely convenient.
Curry powder. Curry powder is the key spice that gives this dish its signature flavor, adding warmth and complexity. I use the classic Keen's curry powder like I do in my curried sausages, but you can use whatever curry powder (and strength) you prefer.
If you really like a bit of spice, add in some fresh chilli, cayenne pepper or chili powder to increase the heat.
Rice. I use a basmati rice as it is typical to use a long-grain version of rice for a curried mince. But you could use any other type of rice you want, or even alternatives like quinoa, mashed potatoes or even pasta for some variety.

How to make curried mince and rice
Step 1: Saute onion in a pan over medium heat until translucent (approx. 2-3 minutes) then add beef and cook until mostly browned (approx. 5 minutes). Remove and set aside.
Step 2: Gently melt the butter on the pan then add in flour and curry powder and whisk to create a thick paste. Then, pour in stock and Worstershire sauce. Allow it to come to a bubble.
Step 3: Add the beef and onion back in and stir everything together until the sauce begins to thicken. Stir in the veggies.
Step 4: Reduce the heat to low and simmer for at least 10 minutes or up to an hour. During this time you can prepare the rice according to the packet instructions or follow my tips and tricks.
Step 5: Serve the curried beef mince over a bed of rice and enjoy!

Top Tip
Whisk your roux. When making the paste with flour and curry powder, use a small whisk to ensure the mixture is smooth and free of lumps before adding in the stock and Worcestershire sauce. This will help the sauce thicken more evenly.
Slow simmer. While the curry is simmering, reduce the heat to the lowest setting to allow the flavors to meld together. The longer you let it simmer, the richer and deeper the flavor will become.
Meal prepping curried mince

Curried beef mince and rice is perfect for meal prepping since it keeps well in the fridge for up to 5 days in an airtight container (make sure to keep the mince and rice on separate sides of the container to ensure the rice doesn't get soggy).
Reheating
Microwave. Add a splash of water or an icecube to the rice before reheating (this will create some steam and help it remain fluffy). Microwave on 1 minute intervals (for approx. 2-3 minutes).
Stove. You could also reheat on the stove over medium heat (approx. 5 minutes).
When serving, I recommend adding some fresh herbs or even a sprinkle or chilli flakes to make it feel like it was freshly cooked (you can also make it more versatile by changing it up each day).
Freezing curried mince
I recommend freezing the curried mince separately from the rice. This recipe makes 10 serves so there's plenty extra for you to freeze for up to 6 months in airtight container or silicone moulds (recommended). The mince and veggies freeze really well and they don't need to be thawed before reheating.

- 15 g (2 tablespoon) flour
- 15 g (2 tablespoon) curry powder, adjust to preferences
- 250 g (1 cups) stock, beef or chicken (homemade or store-bought)
- 30 g (2 tablespoon) worcestershire sauce
- 500 g (3 cups) frozen mixed vegetables
- 500 g (2 ½ cups) rice

Prepare
- Dice: 150 g (5 ½ oz) brown onion
Cook
- Heat pan over medium heat with 15 g (1 tablespoon) olive oil and sauté 150 g (5 ½ oz) brown onionuntil translucent (approx. 2-3 minutes). Add 1 kg lean beef mince and cook until mostly browned (approx. 5 minutes). Remove and set aside.
