This protein French toast bake uses soft Hawaiian rolls, Greek yogurt and a good sprinkle of cinnamon to create a breakfast casserole that will have you excited to eat breakfast every morning. note - ingredients can be approximate
Note 1 - Bread RollsI used Hawaiian bread rolls (the ones with the shiny top), but you can use most rolls or types of bread - I do recommend avoiding your usual sandwich bread as it is quite soft and will go a bit mush (but if it's a bit stale it should be fine). Day old bread is best.Note 2 - Protein PowderThis is optional and can be omitted. If using, I recommend a neutral or vanilla flavor and to use a vegan-based protein powder as these heat better. Whey can sometimes have a funky taste once heated.Serve with: yogurt and fresh fruitStoringStore in an airtight container in the fridge for up to 4 days.ReheatingOven. Reheat individual portions in the oven at 320–340°F / 160–170°C for around 10–12 minutes. Microwave. Heat for 1–2 minutes, covered, to retain moisture. FreezingYou can freeze the entire bake or cut it into individual pieces.Wrap portions tightly in cling wrap plus foil or use a freezer-safe container. Freeze for up to 2 months.
