Dice: 1(3 ½oz) red onion and 500 g(1lb) chicken breastHalve: 250 g(9oz) cherry tomatoes
Add 500 g(1lb) chicken breast to 2 tbsp cornflour. Toss to coat. Set aside.
Add 300 g(10 ½oz) silken tofu, 45 ml(3tablespoon) lemon juice, 1 tbsp dried oregano, 1 tbsp dried thyme, 1 tbsp dried dill, 4 cloves garlic, Salt and pepper to a blender or stick blender or food processor and blitz until smooth.
Cook
In a large and deep pan, heat the 10 ml(2teaspoon) extra virgin olive oil over medium heat and add 500 g(1lb) chicken breast. Cook until the outside is mostly white.
Add 500 ml(2cups) chicken stock, sauce mixture and 350 g(2cups) orzo / risoni to a pan and allow the liquid to come to the boil. Once bubbling, reduce the heat and cover for 10 minutes or until orzo is tender. Stir occassionally.
Lift lid and add 250 g(9oz) cherry tomatoes, 1(3 ½oz) red onion, 300 g(10 oz) spinach. Stir until combined and spinach has wilted (if meal prepping, no need to worry about wilting spinach)
Serve.

Note 1 - Silken Tofu You can substitute with yoghurt or other cream/dairy product. Just note it may split in the heating process. StoringLet cool at room temperature for no more than 2 hours then store in airtight containers in the refrigerator for up to 4 days.ReheatingAdd a splash of water, milk (or even yoghurt/cream) before reheating. Don't stir before reheating as it can fall apart. Microwave. Reheat individual portions in the microwave on 1 minute intervals, stirring after each interval. This should take 2-3 minutes.Stovetop. You can also reheat on stovetop over medium heat until warmed through (approx. 10 minutes)
