Light, refreshing, and full of flavour, this chicken tzatziki salad bowl combines rotisserie chicken, cherry tomatoes, cucumber, and red onion with soft pearl couscous. Tossed in a creamy homemade tzatziki salad dressing with dill, garlic, and lemon, it’s a quick and easy meal that keeps well in the fridge.note - ingredients can be approximate
180g(1cups)pearl couscous , make approx.3 cups cooked
120g(4cups)mixed leaves
300g(10 ½oz)cherry tomatoes,
1(5 ½oz)cucumber,
1(3 ½oz)red onion,
Tzatziki Sauce or store bought (2 cups)
420g(2cups)Greek yoghurt, subs Note 1
1cucumber,

Instructions
Prepare ingredients
Bring a pot of salted water to a boil. Add 180 g(1cups) pearl couscous and cook per package instructions until tender (typically a 3:1 water-to-couscous ratio, about 10 minutes). Drain, rinse under cold water to stop cooking, and let cool to prevent clumping.
For salad - Slice: 300 g(10 ½oz) cherry tomatoes, 1(5 ½oz) cucumber, 1(3 ½oz) red onionShred: 500 g(1lb) rotisserie chicken
For Tzatziki - Mince 2 garlic cloves; dice or grate: 1 cucumber; dice: 2 tbsp dill
Make Tzatziki
In a bowl, mix 420 g(2cups) Greek yoghurt, 1 cucumber, 2 garlic cloves, 2 tbsp dill, and 1 lemon juice. Stir until combined, seasoning with salt and pepper . Adjust consistency with a splash of water or olive oil if needed. Refrigerate while assembling the salad to enhance the flavors.
Assemble and serve
For immediate serving: In a large bowl, layer 120 g(4cups) mixed leaves, cooled couscous, 500 g(1lb) rotisserie chicken (shredded), halved 300 g(10 ½oz) cherry tomatoes, 1(5 ½oz) cucumber (sliced) and 1(3 ½oz) red onion (sliced). Top with tzatziki dressing and optional feta.
For meal prep: Add dressing to the bottom of a mason jar or container, followed by chicken, couscous, tomatoes, cucumber, onion, and leaves. This keeps the greens fresh—flip onto a plate before serving.

Note 1 - YoghurtSubstitute with dairy-free yoghurt if required.Note 2 - GarlicFresh garlic produces the most intense flavour and is recommended. You can use from the jar, however this will impact the overall flavour. I suggest doubling in teaspoon per clove (e.g. for 2 cloves, use 4 teaspoon of ready-minced)StoringKeep the salad in an airtight container in the fridge for up to 3-4 days. Store the homemade tzatziki salad dressing separately to the rest of the salad and add just before serving to prevent the mixed leaves from wilting.You could also layer a jar or container as I have done in the photo with the sauce and chicken at the bottom, then couscous, vegetables and finally the greens to prevent sogginess.
