In a small bowl or jar, combine fresh ¼ cup lemon juice, 1 tbsp lemon rind, 1 tbsp fresh thyme, 2 garlic cloves, 1 tsp white sugar, ¼ cup water
Slowly whisk in ¼ cup extra virgin olive oil until the mixture is emulsified. Alternatively, place all ingredients in a jar with a tight-fitting lid and shake vigorously.
Taste and adjust seasoning with salt and pepper as needed.

Note 1 - extra virgin olive oilGood quality is recommended as there are minimal ingredients in this vinaigrette and you don't want anything letting it down.Note 2 - Lemon juice & rindFreshly squeezed lemon juice will provide the greatest depth of flavour, and the rind (optional) can be added for an extra amount of zestiness.Note 3 - Fresh ThymeDried can be used, but halve the amount as it's more concentrated.
