Skip takeout lines! Whip up lightning-fast Japanese beef teriyaki noodles. Flavourful sauce coats juicy beef and fluffy noodles for a satisfying, budget-friendly feast. Weeknight hero alert!Measurements don't need to be exact which is why cups are provided. Retain ratios, but approximates are fine.
Add cubed 400 g(14oz) flank steak and 2 tbsp corn starch / corn flour to a large bowl. Toss to coat. Set aside
Separate 3 bulbs bok choy and clean well. Slice into bite-sized pieces. Julienne 2(5 ½oz) carrots.
Mix together sauce ingredients: ½ cup soy sauce, ¼ cup brown sugar, 3 tbsp mirin, 2 cloves garlic, 1 tsp ginger, 1 tbsp maple syrup, ¼ cup water

In a large pan or wok, heat 1 tbsp high heat oil and add beef. Turn frequently and allow to turn mostly brown on the outside (approx. 2-3 minutes).
Add sauce to the pan with the beef and bring it to the boil (approx. 5 minutes). It should thicken slightly in this time.
Once boiling, reduce heat to medium-low and add 400 g(14oz) noodles and vegetables. Stir until combined with the sauce and beef. Remove from heat and let sit for a couple of minutes before serving.

Note 1 - BeefFlank steak is my recommendation as it's accessible at most supermarkets, quick to cook and leaner than most cuts. You can also purchase already cut stir-fry beef from most supermarkets (but the cost per kg is normally slightly higher).You can definitely substitute for other cuts of steak, or even ground beef.Note 2 - NoodlesYou can use any fresh or dried noodles of your preference. While the noodles might soften and veggies lose their crispness after 2-3 days, some enjoy them even up to 5-6 days, just with different textures. ReheatDrizzle a tablespoon of water over the dish before reheating. Don't stir the noodles yet. Then reheat in 1-minute intervals, carefully stirring after each zap. It'll take approx. 3 minutes.
