The ham asparagus egg frittata is proof you don’t need cream to make something rich and delicious. With fluffy eggs, crisp asparagus, salty ham, and gooey cheese, this easy oven-baked frittata is a quick win for a busy morning meal prep or lazy brunch.

Ingredients
6large eggs
120g(1cups)flour
60ml(¼cups)extra virgin olive oil, subs note 1
30g(¼cups)cheese, grated, see note 2
200g(7oz)ham, diced, see note 3
200g(7oz)asparagus, see note 4
50g(½cups)spring onion
10g(2tablespoon)Italian seasoning, adjust to taste

Prepare
Preheat the oven to 160°C (320°F) and grease a baking safe dish (e.g. pie dish) with butter/oil.
Trim the 200 g(7oz) asparagus into bite-sized pieces; thinly slice: 50 g(½cups) spring onion and 200 g(7oz) ham. Grate 30 g(¼cups) cheese if needed.
Make mixture
Whisk the 6 large eggs in a large bowl until fluffy, then gradually whisk in the 120 g(1cups) flour until smooth.
Stir in the 60 ml(¼cups) extra virgin olive oil, 30 g(¼cups) cheese, Salt and pepper10 g(2tablespoon) Italian seasoning until combined.
Mix in the 200 g(7oz) ham200 g(7oz) asparagus50 g(½cups) spring onion until evenly coated.
Bake
Pour the mixture into the prepared dish, spreading it evenly, and bake for 30–40 minutes until set (test with a skewer, it should come out clean) and golden.
Let cool for 5–10 minutes before slicing. Serve warm, at room temperature, or chilled as desired.
