Ditch the bowl, embrace the wrap! Our turkey san choy bow bursts with flavour with crunchy veggies in a sweet-savoury sauce, nestled in crisp lettuce cups. note - ingredients can be approximate
Mix together 2 tbsp soy sauce, 2 tbsp oyster sauce, 2 tsp sesame oil, 2 tbsp(2 tablespoon) mirin, 2 cloves garlic (minced), ½ tsp(½teaspoon) ginger (minced), 2 tsp cornflour, 3 tbsp water, 2 tbsp sweet chilli into a small bowl. Make sure the cornflour dissolves. Use a fork if it clumps
Cook
Add 1 tbsp(1 tablespoon) olive oil to a large pan or wok over medium-high heat. Add 150 g(5 ½oz) brown onion and cook until translucent and fragrant (approx. 2 minutes).
Add 400 g(14oz) turkey breast mince and cook until it turns mostly white (approx. 5 minutes).
Add 100 g(3 ½oz) carrot, 150 g(5 ½oz) zucchini, 100 g(3 ½oz) capsicum, 225 g(8oz) canned water chestnuts and sauce to the mince mixture, and let simmer until the sauce begins to bubble. Reduce heat to low and cook for a further 10 minutes or until the sauce has been mostly absorbed.
Cook 200 g(7oz) vermicelli noodles according to packet instructions (normally in a large bowl with boiling water for 5 minutes). Once cooked, mix in with the filling until sauce is distributed.
Assemble
Add filling to the 12 large lettuce leaves and top with your choice of garnishes (e.g. sesame seeds, spring onion) Eat like a taco!

Note 1 - Oyster Sauce Highly recommended as Oyster sauce is essentially 10 different sauces in 1. But, in a pinch, use additional soy sauce, it just won't have the same depth of flavours.Note 2 - Garlic and Ginger These add a good punch of flavour to the sauce and I recommend using fresh. In a pinch, you can use jar or pre-minced but you won't get the same intensity of flavour.Note 3 - LettuceI use cos lettuce (or romaine) for this as I really like the crunch they give. If you're lucky, they can come in perfect boat shapes to hold your san choy bow filling.I wouldn't recommend iceburg lettuce as its prone to breaking (and then you'll have lots of the filling all over your hands). Other types of lettuce can definitely be used - it's up to how much CRUNCH you're looking for.Note 4 - Turkey Mince Pork and Chicken mince are often used in San Choy Bow. You could also use crumbled tofu for a vegetarian option.Storing Separate the ground turkey filling separately from the lettuce cups in air tight containers. For the lettuce cups, dry completely and store with a paper towel between to keep them crisp.The lettuce will be fine for approx. 3 days where it might start to wilt and change texture. Reheating You can eat cold, or add filling to microwave with a splash of water for approx. 2 minutes or until heated through, then assemble with the lettuce cups.
