Hot cross bun french toast should take centre stage at your Easter table. The spiced buns soak up the delicious cinnamon and brown sugar egg mixture, and topped with delicious berries and maple syrup, the baked hot cross buns are a new favourite. note - ingredients should be approximate
Mix together the 4 eggs (or yogurt), 1 cup milk, ¼ cup brown sugar, 2 tbsp cinnamon, 1 tsp vanilla extract, ¼ cup protein powder (optional) in a large bowl.
Add hot cross bun cubes to a casserole dish and add in 1 cup raspberries
Coat in the egg mixture and allow it to soak for at least 10 minutes (preferably at least an hour and up to overnight). See post for tips on making this ahead.
Add to the oven and bake for 40 minutes @180C (360?) or until the top of the buns are a toasty golden brown. Serve immediately or store for a meal prep recipe (see post for tips on using this as a breakfast meal prep and leftovers)

Note 1 - EggsAt the time of reviewing this recipe, Eggs are very expensive and hard to find. If you don't have eggs, or are seeking an alternative, swap the 4 eggs for 1 cup Greek yogurt.
