Soft, buttery, and a little mischievous, these green Grinch cookies are the ultimate holiday bake. With bright green M&Ms, a pop of red from the heart, and a cakey center, they’re fun, easy, and scream Grinch with heart cookies for Christmas dessert trays.Note: normally I provide both the weighted measurements and cups/spoons, however, as baking requirements more precision, I have opted to include grams where required.
Beat the Butter and Sugars: In a large bowl, beat softened butter, white sugar, and brown sugar until light and fluffy (about 2–3 minutes).
Add Wet Ingredients: Mix in vanilla extract, almond extract (if using), green food colouring, and egg until smooth and combined.
Stir in Dry Ingredients: Gradually stir in the flour, mixing just until a soft dough forms. Avoid overmixing to keep the cookies soft.
Fold in M&Ms: Gently fold in green M&Ms, reserving a few to press on top. Chill the dough for 30 minutes for best results.
Shape the Cookies: Preheat the oven to 175°C (350°F). Roll tablespoon-sized portions of dough into balls, place them on a lined baking tray, and space them a few centimetres apart.
Decorate Before Baking: Press reserved M&Ms and red sprinkle hearts onto the top of each dough ball. If using icing for hearts, add after baking and cooling to prevent melting.
Bake and Cool: Bake for 10–12 minutes until the edges are set but the centres remain soft. Let cookies cool on the tray for 10 minutes before transferring to a wire rack.

Note 1 - ButterSubstitutions - margarine or nuttelexNote 2 - SugarsYou can use white sugar or brown sugar (or a different combination of the two), but the texture may change. White sugar helps cookies spread, making them crispier. Brown sugar is more moist which adds a softness to the cookies while keeping them thick. Adjusting the ratio of the sugars can help you customise the texture and flavour to your liking.Note 3 - GreenM&Ms You can substitute for other chocolate chip varieties, the green m&ms just work well for the green grinch cookies.Note 4 - Red HeartI used small red heart sprinkles, but you could create hearts using icing.
